Why have a switch?
The main reason for the two-way design is filter longevity. Internal filter cartridges have a limited life span (usually measured in gallons or months). Using the switch allows you to save the filter for consumption while using standard, unfiltered tap water for tasks that don't require it, such as:

Since these filters sit right over your sink, the bypass mode is also useful because it often allows for a higher flow rate than the filtered mode, which can be quite slow due to the density of the carbon or ceramic inside.
